Smooth Sieved Prune Souffle With Cream Of Tartar
Ingredients
- 1 cup stewed prunes, stoned and rubbed through a sieve
- 5 egg whites
- 5 tablespoons powdered sugar
- 1 pinch cream of tartar
- Few grains of salt
- Butter for greasing dish
Method
- 1 Stone and sieve the stewed prunes until smooth.
- 2 Beat egg whites to stiff peaks, adding sugar, cream of tartar, and salt.
- 3 Gently fold in the prunes.
- 4 Pour into a buttered baking dish.
- 5 Bake in a slow oven (300°F) for 20 minutes.
- 6 Serve hot or cold with boiled custard.
