Smooth Lentil And Vegetable Soup
Ingredients
- 1 pint Egyptian lentils
- 1 good-sized onion
- 1 carrot
- 1 turnip
- 3 sticks celery
- 2 quarts water
- Salt and pepper to taste
- Fried croutons for serving
Method
- 1 Wash the lentils thoroughly.
- 2 Boil lentils with water, chopped onion, carrot, turnip, and celery for 2-3 hours until very soft.
- 3 Rub the mixture through a wire sieve to create a smooth puree.
- 4 Return the puree to a stewpan, heat through while stirring, and season with salt and pepper.
- 5 Serve hot with fried croutons.
