Smooth Lentil And Vegetable Soup

Ingredients

  • 1 pint Egyptian lentils
  • 1 good-sized onion
  • 1 carrot
  • 1 turnip
  • 3 sticks celery
  • 2 quarts water
  • Salt and pepper to taste
  • Fried croutons for serving

Method

  1. 1 Wash the lentils thoroughly.
  2. 2 Boil lentils with water, chopped onion, carrot, turnip, and celery for 2-3 hours until very soft.
  3. 3 Rub the mixture through a wire sieve to create a smooth puree.
  4. 4 Return the puree to a stewpan, heat through while stirring, and season with salt and pepper.
  5. 5 Serve hot with fried croutons.
