Smooth Creole Tomato Sauce
Ingredients
- 1 cup stewed tomatoes
- 3 onions
- 1 green pepper, chopped fine
- 2 tablespoons cornstarch
- 1/2 cup water
- 1 teaspoon salt
- 1 teaspoon paprika
- 1/4 teaspoon mustard
Method
- 1 Place tomatoes, onions, and green pepper in a saucepan and cook slowly until vegetables are soft.
- 2 Rub the mixture through a fine sieve to create a smooth base.
- 3 Stir in cornstarch dissolved in water, salt, paprika, and mustard.
- 4 Bring to a boil and cook slowly for ten minutes, then serve.
