Ingredients

  • 1 cup almond paste
  • ¾ cup sugar
  • 3 egg whites
  • pinch of salt

Method

  1. 1 Rub almond paste until smooth, then gradually work in the sugar until well mixed.
  2. 2 Add a pinch of salt and beat in one egg white at a time, mixing thoroughly after each addition.
  3. 3 Let the mixture stand for 20 minutes.
  4. 4 Drop teaspoonfuls onto a lightly buttered baking sheet.
  5. 5 Bake in a slow oven (300°F) for 25 to 30 minutes until the surface is dry.
  6. 6 Keep in a cool place overnight before serving.
