Smooth Almond Paste Macaroons
Ingredients
- 1 cup almond paste
- ¾ cup sugar
- 3 egg whites
- pinch of salt
Method
- 1 Rub almond paste until smooth, then gradually work in the sugar until well mixed.
- 2 Add a pinch of salt and beat in one egg white at a time, mixing thoroughly after each addition.
- 3 Let the mixture stand for 20 minutes.
- 4 Drop teaspoonfuls onto a lightly buttered baking sheet.
- 5 Bake in a slow oven (300°F) for 25 to 30 minutes until the surface is dry.
- 6 Keep in a cool place overnight before serving.
