Smoked Turkey Cooked Greens
Ingredients
- 3 cups water
- 1/4 pound smoked skinless turkey breast
- 3 teaspoons freshly chopped hot pepper
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon ground cloves
- 2 cloves garlic, crushed
- 1/2 teaspoon thyme
- 1 scallion stalk, chopped
- 1 teaspoon ground ginger
- 1/4 cup chopped onion
- 14 cups mustard greens, turnip greens, collard greens, kale, or a mixture (about 2 pounds)
Method
- 1 Place all ingredients except the greens into a large saucepan and bring to a boil.
- 2 Wash the greens thoroughly and remove the stems.
- 3 Tear or slice the leaves into bite-size pieces.
- 4 Add the prepared greens to the boiling turkey stock and cook for 20-30 minutes until tender.
