Smoked Turkey Cooked Greens

Ingredients

  • 3 cups water
  • 1/4 pound smoked skinless turkey breast
  • 3 teaspoons freshly chopped hot pepper
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon ground cloves
  • 2 cloves garlic, crushed
  • 1/2 teaspoon thyme
  • 1 scallion stalk, chopped
  • 1 teaspoon ground ginger
  • 1/4 cup chopped onion
  • 14 cups mustard greens, turnip greens, collard greens, kale, or a mixture (about 2 pounds)

Method

  1. 1 Place all ingredients except the greens into a large saucepan and bring to a boil.
  2. 2 Wash the greens thoroughly and remove the stems.
  3. 3 Tear or slice the leaves into bite-size pieces.
  4. 4 Add the prepared greens to the boiling turkey stock and cook for 20-30 minutes until tender.
