Smoked Salmon Rice Casserole With Eggs
Ingredients
- 2 medium leeks, washed and finely chopped
- 1/2 cup water
- 2 cups cooked rice
- 1 tsp salt
- 1 tsp soy sauce
- 2 hard-boiled eggs, sliced
- 1 tbsp finely chopped parsley
- slices smoked salmon
Method
- 1 Cook chopped leeks in 1/2 cup water until tender. Drain.
- 2 Mix leeks with cooked rice, salt, and soy sauce.
- 3 Transfer mixture to a hot baking dish.
- 4 Top with sliced hard-boiled eggs, parsley, and smoked salmon.
- 5 Heat in the oven for a few minutes until warm.
