Smoked Salmon Rice Casserole With Eggs

Ingredients

  • 2 medium leeks, washed and finely chopped
  • 1/2 cup water
  • 2 cups cooked rice
  • 1 tsp salt
  • 1 tsp soy sauce
  • 2 hard-boiled eggs, sliced
  • 1 tbsp finely chopped parsley
  • slices smoked salmon

Method

  1. 1 Cook chopped leeks in 1/2 cup water until tender. Drain.
  2. 2 Mix leeks with cooked rice, salt, and soy sauce.
  3. 3 Transfer mixture to a hot baking dish.
  4. 4 Top with sliced hard-boiled eggs, parsley, and smoked salmon.
  5. 5 Heat in the oven for a few minutes until warm.
