Smoked Pork Split Pea Soup

Ingredients

  • 1 quart split peas
  • 3 ½ quarts salted water
  • 1 small piece pork
  • 1 onion
  • White pepper
  • Salt
  • Fried bread cubes

Method

  1. 1 Soak split peas in lukewarm water for 3 hours, then drain.
  2. 2 Boil peas in 3 ½ quarts salted water until thoroughly soft.
  3. 3 Rub peas through a colander, discarding solids.
  4. 4 Boil 1 quart of the pea mixture with pork, onion, pepper, and salt.
  5. 5 Strain soup, serve hot with fried bread cubes.
