Smoked Pork Split Pea Soup
Ingredients
- 1 quart split peas
- 3 ½ quarts salted water
- 1 small piece pork
- 1 onion
- White pepper
- Salt
- Fried bread cubes
Method
- 1 Soak split peas in lukewarm water for 3 hours, then drain.
- 2 Boil peas in 3 ½ quarts salted water until thoroughly soft.
- 3 Rub peas through a colander, discarding solids.
- 4 Boil 1 quart of the pea mixture with pork, onion, pepper, and salt.
- 5 Strain soup, serve hot with fried bread cubes.
