Smoked Ham Hock And Lima Bean Stew
Ingredients
- 1 medium onion, peeled, rinsed, and chopped
- 2 cloves garlic, minced
- 8 smoked ham hocks
- 8 cups water
- 1 pound frozen lima beans
- 1/2 teaspoon ground black pepper
- Salt to taste (optional)
Method
- 1 Peel, rinse, and chop the onion. Peel and mince the garlic.
- 2 In a large pot over high heat, add ham hocks and water. Bring to a boil, then reduce heat to a simmer. Add onion and garlic. Cover and cook until meat is tender (about 30-40 minutes).
- 3 Transfer ham hocks to a cutting board to cool. Add lima beans to the pot and cook according to package directions.
- 4 Once cool, shred meat from the bones, removing any fat. Return meat to the pot.
- 5 Stir in pepper and salt to taste. Serve hot.
