Smørrebrød Style Fish Sandwiches

Ingredients

  • 1 cup cold cooked fish, flaked
  • Salt and pepper to taste
  • Lemon juice
  • 1 clove garlic
  • ½ cup mayonnaise
  • 4 gherkins, finely chopped
  • 12 olives, chopped
  • 2 tbsp capers
  • 2 tbsp parsley, finely chopped
  • 4 slices plain bread
  • Lettuce leaves

Method

  1. 1 Rub the bottom of a bowl with a cut garlic clove, then discard the garlic.
  2. 2 Mix mayonnaise, chopped gherkins, olives, capers, and parsley in the bowl.
  3. 3 Season flaked fish with salt, pepper, and lemon juice.
  4. 4 Spread dressing on bread slices, add fish and lettuce, then top with bread.
  5. 5 Trim crusts and cut sandwiches into fingers.
