Smørrebrød Style Fish Sandwiches
Ingredients
- 1 cup cold cooked fish, flaked
- Salt and pepper to taste
- Lemon juice
- 1 clove garlic
- ½ cup mayonnaise
- 4 gherkins, finely chopped
- 12 olives, chopped
- 2 tbsp capers
- 2 tbsp parsley, finely chopped
- 4 slices plain bread
- Lettuce leaves
Method
- 1 Rub the bottom of a bowl with a cut garlic clove, then discard the garlic.
- 2 Mix mayonnaise, chopped gherkins, olives, capers, and parsley in the bowl.
- 3 Season flaked fish with salt, pepper, and lemon juice.
- 4 Spread dressing on bread slices, add fish and lettuce, then top with bread.
- 5 Trim crusts and cut sandwiches into fingers.
