Slow-Stewed Creamed Spinach On Toast
Ingredients
- young spinach
- salt
- boiling water
- cold water
- butter
- flour
- sugar
- nutmeg
- cream or milk
- toasted bread
- melted butter
Method
- 1 Boil spinach in salted water, then drain and soak in cold water for 15 minutes.
- 2 Drain, squeeze dry, and chop the spinach finely.
- 3 Stew chopped spinach slowly in a large piece of butter for 15 minutes.
- 4 Stir in flour, salt, sugar, and nutmeg, then moisten with cream or milk.
- 5 Simmer over low heat for 15 minutes, then serve topped with buttered toast.
