Slow Simmered Ox Tail Soup
Ingredients
- 2 ox tails
- 1 onion
- 1 tablespoon drippings or salt pork
- 4 quarts cold water
- 1 stalk celery
- 1 root parsley
- 3 cloves
- 6 peppercorns
- 1 tablespoon salt
Method
- 1 Cut the ox tails into pieces at the joints.
- 2 Sauté the onion and ox tails in drippings until delicately browned.
- 3 Place meat in a soup pot with cold water. Bring to a boil.
- 4 Add celery, parsley, cloves, and peppercorns. Simmer for 4 hours.
- 5 Add salt, strain, and skim off the grease.
- 6 Place one piece of ox tail in each tureen and ladle soup over it.
