Slow Cooker Pulled Pork Slaw Sandwiches
Ingredients
- 1 1/2 lbs bone-in pork shoulder
- 1 cup cider or white vinegar
- 1 tsp black pepper
- 1/2 tsp crushed red pepper flakes
- 8 whole wheat dinner rolls or slider buns
- 1 head red cabbage, shredded
- 2 carrots, scrubbed and shredded
- 1/4 cup canola oil
- 1/4 cup vinegar
- 1/4 tsp salt
- 1/4 tsp black pepper
Method
- 1 Place pork shoulder, vinegar, black pepper, and red pepper flakes in a slow cooker. Cook on medium for 8 hours until fork-tender (190°F).
- 2 Remove pork, reserving cooking liquid. Shred meat with two forks, removing fat. Skim excess fat from liquid, then mix 1 cup of liquid back into the pork.
- 3 Combine shredded cabbage and carrots in a bowl. Whisk canola oil, vinegar, salt, and pepper, then toss with the vegetables to coat thoroughly.
- 4 Assemble sandwiches by adding 1/2 cup pulled pork to each roll, topping with 1/2 cup slaw. Serve immediately.
