Slow Cooker Pulled Pork Slaw Sandwiches

Ingredients

  • 1 1/2 lbs bone-in pork shoulder
  • 1 cup cider or white vinegar
  • 1 tsp black pepper
  • 1/2 tsp crushed red pepper flakes
  • 8 whole wheat dinner rolls or slider buns
  • 1 head red cabbage, shredded
  • 2 carrots, scrubbed and shredded
  • 1/4 cup canola oil
  • 1/4 cup vinegar
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Method

  1. 1 Place pork shoulder, vinegar, black pepper, and red pepper flakes in a slow cooker. Cook on medium for 8 hours until fork-tender (190°F).
  2. 2 Remove pork, reserving cooking liquid. Shred meat with two forks, removing fat. Skim excess fat from liquid, then mix 1 cup of liquid back into the pork.
  3. 3 Combine shredded cabbage and carrots in a bowl. Whisk canola oil, vinegar, salt, and pepper, then toss with the vegetables to coat thoroughly.
  4. 4 Assemble sandwiches by adding 1/2 cup pulled pork to each roll, topping with 1/2 cup slaw. Serve immediately.
