Slow Cooker Pork Stew With Cherries And Cereal
Ingredients
- 2 pounds lean pork stew meat
- 3 cups baby carrots
- 1 large onion, sliced
- 1 1/2 teaspoons dried thyme leaves
- 1/2 teaspoon coarse ground black pepper
- 1/4 teaspoon salt
- 1 clove garlic, minced
- 3/4 cup crushed ready-to-eat bran and wheat flakes cereal
- 1 cup dried tart cherries
- 3/4 cup 100% apple juice or apple cider
- 4 cups hot cooked brown rice
Method
- 1 Trim fat from pork. Brown pork in batches in a sprayed pan.
- 2 In a slow cooker, layer carrots, onion, thyme, pepper, salt, and garlic.
- 3 Sprinkle cereal and cherries over vegetables. Top with browned pork.
- 4 Pour apple juice over contents. Cover and cook on low 7-8 hours or high 3.5-4 hours.
- 5 Cook brown rice. Stir stew and serve over 1/2 cup rice per person.
