Slow Cooked Pork Pepper Pot
Ingredients
- 3 lbs lean pork, cut into 2-inch cubes
- 2 large onions, sliced
- 6 large green bell peppers
- 1 tbsp salt
- 3 large tomatoes, peeled and chopped
- Water
- Boiled rice or potatoes, for serving
Method
- 1 Fry the pork cubes until browned.
- 2 Place the browned pork in a 3-quart stone pot with a close-fitting lid.
- 3 Add the sliced onions, green peppers, salt, and chopped tomatoes to the pot.
- 4 Fill the pot with water, cover, and simmer for 5-6 hours or longer until the meat is tender.
- 5 Serve the pepper pot with plenty of boiled rice or potatoes.
