Slow Cooked Pork Pepper Pot

Ingredients

  • 3 lbs lean pork, cut into 2-inch cubes
  • 2 large onions, sliced
  • 6 large green bell peppers
  • 1 tbsp salt
  • 3 large tomatoes, peeled and chopped
  • Water
  • Boiled rice or potatoes, for serving

Method

  1. 1 Fry the pork cubes until browned.
  2. 2 Place the browned pork in a 3-quart stone pot with a close-fitting lid.
  3. 3 Add the sliced onions, green peppers, salt, and chopped tomatoes to the pot.
  4. 4 Fill the pot with water, cover, and simmer for 5-6 hours or longer until the meat is tender.
  5. 5 Serve the pepper pot with plenty of boiled rice or potatoes.
