Slow Cooked Pearl Barley With Fruit

Ingredients

  • 1 cup pearl barley
  • 1 tsp salt
  • 5 cups boiling water
  • 1 cup dates, figs, or prunes

Method

  1. 1 Examine barley for foreign matter and add to boiling salted water.
  2. 2 Cook directly over flame for 10 minutes, then transfer to a double boiler.
  3. 3 Cook in double boiler for 3 to 4 hours until water is completely absorbed.
  4. 4 Prepare fruit: pit and quarter dates, soak and chop figs, or stew and chop prunes.
  5. 5 Add prepared fruit to barley 10-15 minutes before removing from heat.
  6. 6 Serve hot with cream or milk and sugar.
