Slow Cooked Molasses Baked Beans
Ingredients
- 1 quart beans
- 1 scant teaspoon baking soda
- 3 tablespoons molasses
- ¼ pound salt pork
- ¼ pound bacon
- 3 tablespoons vinegar
- ½ teaspoon mustard
- salt and pepper to taste
- 3 tablespoons catsup
Method
- 1 Soak beans overnight in lukewarm water with baking soda.
- 2 Pour off water, wash beans in cold water, and drain.
- 3 Place salt pork in bottom of bean crock and layer beans on top.
- 4 Season with salt and pepper, then add slices of bacon on top.
- 5 Blend mustard, vinegar, molasses, and catsup; pour over beans.
- 6 Fill crock with lukewarm water and bake in a slow oven (300°F) for at least six hours.
