Slow Cooked Beef And Vegetable Soup

Ingredients

  • 1 lb lean beef, chopped fine
  • 1 large carrot, peeled and sliced
  • 1 large turnip, peeled and sliced
  • 6 small onions, peeled and sliced
  • 1 stalk celery, sliced
  • 2 cups tomatoes
  • 1 small bunch parsley
  • 6 cloves
  • 6 peppercorns
  • 1 sprig thyme
  • 1 tbsp salt
  • 1 tsp sugar
  • 1 pinch black pepper
  • 5 pints cold water
  • Croutons, for serving

Method

  1. 1 Chop the beef fine. Peel and slice the carrot, turnip, onions, and celery. Prepare the tomatoes.
  2. 2 Tie the parsley, cloves, peppercorns, and thyme in a muslin cloth to create a spice bag.
  3. 3 Place the beef, vegetables, spice bag, salt, sugar, and pepper into a bean-pot or large pot.
  4. 4 Cover with 5 pints of cold water. Cover the pot and bake in a slow oven (300°F) for 5 hours.
  5. 5 Remove the spice bag. Ladle the soup into bowls and serve with croutons.
