Slow Cooked Beef And Vegetable Soup
Ingredients
- 1 lb lean beef, chopped fine
- 1 large carrot, peeled and sliced
- 1 large turnip, peeled and sliced
- 6 small onions, peeled and sliced
- 1 stalk celery, sliced
- 2 cups tomatoes
- 1 small bunch parsley
- 6 cloves
- 6 peppercorns
- 1 sprig thyme
- 1 tbsp salt
- 1 tsp sugar
- 1 pinch black pepper
- 5 pints cold water
- Croutons, for serving
Method
- 1 Chop the beef fine. Peel and slice the carrot, turnip, onions, and celery. Prepare the tomatoes.
- 2 Tie the parsley, cloves, peppercorns, and thyme in a muslin cloth to create a spice bag.
- 3 Place the beef, vegetables, spice bag, salt, sugar, and pepper into a bean-pot or large pot.
- 4 Cover with 5 pints of cold water. Cover the pot and bake in a slow oven (300°F) for 5 hours.
- 5 Remove the spice bag. Ladle the soup into bowls and serve with croutons.
