Slow-Baked Rice Pudding With Nutmeg
Ingredients
- 2 heaping tablespoons well-washed rice
- 1 quart milk
- ½ teaspoon salt
- 2 tablespoons sugar
- ½ teaspoon vanilla extract
- ½ cup stoned raisins (optional)
- Freshly grated nutmeg
Method
- 1 Preheat oven to 300°F. Place rice, milk, and salt in a quart-sized pudding dish.
- 2 Cook in the oven for 30 minutes, stirring two or three times to prevent sticking.
- 3 Remove from oven and stir in sugar, vanilla, and raisins if using.
- 4 Return to oven and cook slowly for at least 2 hours, stirring occasionally.
- 5 As milk reduces, lift the skin at the side and add more hot milk to maintain creaminess.
- 6 Grate fresh nutmeg over the top before serving.
