Slow-Baked Rice Pudding With Nutmeg

  • 2 heaping tablespoons well-washed rice
  • 1 quart milk
  • ½ teaspoon salt
  • 2 tablespoons sugar
  • ½ teaspoon vanilla extract
  • ½ cup stoned raisins (optional)
  • Freshly grated nutmeg

Method

  1. 1 Preheat oven to 300°F. Place rice, milk, and salt in a quart-sized pudding dish.
  2. 2 Cook in the oven for 30 minutes, stirring two or three times to prevent sticking.
  3. 3 Remove from oven and stir in sugar, vanilla, and raisins if using.
  4. 4 Return to oven and cook slowly for at least 2 hours, stirring occasionally.
  5. 5 As milk reduces, lift the skin at the side and add more hot milk to maintain creaminess.
  6. 6 Grate fresh nutmeg over the top before serving.
