Slow Baked Navy Beans With Molasses And Bacon
Ingredients
- 2 cups navy beans
- 1½ tsp salt
- 1 small onion, minced
- 4 tbsp molasses
- 1 tsp dry mustard
- 4 tbsp catsup
- ¼ lb salt pork or 4 slices bacon
Method
- 1 Soak beans overnight in cold water, then drain.
- 2 Add 1½ quarts fresh water and onion; cook slowly until skins burst.
- 3 Drain beans, reserving the cooking liquid.
- 4 Mix molasses, salt, mustard, and catsup with 1 cup of the reserved liquid.
- 5 Layer half the pork or bacon in a baking dish, add beans, and top with remaining meat.
- 6 Pour molasses mixture over beans, adding more liquid to cover.
- 7 Bake covered at 300°F for 5 hours, uncovering for the last 30 minutes.
