Slow Baked Navy Beans With Molasses And Bacon

Ingredients

  • 2 cups navy beans
  • 1½ tsp salt
  • 1 small onion, minced
  • 4 tbsp molasses
  • 1 tsp dry mustard
  • 4 tbsp catsup
  • ¼ lb salt pork or 4 slices bacon

Method

  1. 1 Soak beans overnight in cold water, then drain.
  2. 2 Add 1½ quarts fresh water and onion; cook slowly until skins burst.
  3. 3 Drain beans, reserving the cooking liquid.
  4. 4 Mix molasses, salt, mustard, and catsup with 1 cup of the reserved liquid.
  5. 5 Layer half the pork or bacon in a baking dish, add beans, and top with remaining meat.
  6. 6 Pour molasses mixture over beans, adding more liquid to cover.
  7. 7 Bake covered at 300°F for 5 hours, uncovering for the last 30 minutes.
