Slow Baked Boston Beans With Salt Pork

Ingredients

  • 1 quart dried beans
  • ½ pound salt pork
  • 1 tablespoon salt
  • ¼ teaspoon pepper
  • ½ teaspoon dry mustard
  • 2 tablespoons molasses
  • 4 cups cold water

Method

  1. 1 Wash and soak beans overnight.
  2. 2 Place half the beans in a bean pot.
  3. 3 Wash salt pork and place it in the center of the pot.
  4. 4 Add the remaining beans, salt, pepper, mustard, molasses, and 4 cups of cold water.
  5. 5 Cover the pot and bake in a slow oven (300°F) for 8 hours, adding more water if needed.
