Sliced Meat Casserole With Onion Gravy

Ingredients

  • leftover cold meat (pork, beef, veal, ham, or mutton), sliced
  • 1 tbsp butter
  • 1 onion, finely sliced
  • 1 tbsp butter
  • 1 tbsp flour
  • water, as needed
  • 1 tsp meat extract
  • 1 pinch salt
  • mashed potatoes, light and fluffy

Method

  1. 1 Melt 1 tbsp butter in a pan. Add sliced onion and cook until browned.
  2. 2 In another pan, melt 1 tbsp butter and whisk in flour. Add the browned onions and butter mixture.
  3. 3 Add enough water to create a thin sauce. Stir in meat extract and salt.
  4. 4 Place meat slices in a fireproof dish, pour sauce over them, then top with mashed potatoes.
  5. 5 Bake in a moderate oven (350°F) until well heated through.
