Sliced Lobster Newburg With Brandy And Nutmeg
Ingredients
- 2 medium lobsters, meat removed and sliced
- 4 tablespoons butter
- ½ teaspoon salt
- ¼ teaspoon pepper
- 2 tablespoons sherry wine
- 2 tablespoons brandy
- Freshly grated nutmeg
- 4 egg yolks
- 1 cup heavy cream
Method
- 1 Remove lobster meat from shells and cut into delicate slices.
- 2 Melt butter in a skillet or blazer over medium heat. Add lobster slices and cook for 4-5 minutes.
- 3 Season with salt, pepper, and a grating of nutmeg. Stir in the sherry and brandy.
- 4 Whisk egg yolks into the cream, then stir this mixture into the lobster. Cook until the sauce thickens, then serve immediately.
