Ingredients

  • 2 medium lobsters, meat removed and sliced
  • 4 tablespoons butter
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 2 tablespoons sherry wine
  • 2 tablespoons brandy
  • Freshly grated nutmeg
  • 4 egg yolks
  • 1 cup heavy cream

Method
