Skillet Turkey Pasta With Vegetables
Ingredients
- 1 pound 85% lean ground turkey
- 1 teaspoon paprika
- 1 can (14.5 ounces) crushed tomatoes, low sodium
- 1 can (14.5 ounces) chicken broth, reduced sodium
- 2 cups uncooked bow-tie pasta
- 3 cups frozen vegetables (carrots, broccoli, cauliflower), thawed
- 1/2 cup chopped parsley
- 1/4 cup dry seasoned bread crumbs
- 1/4 cup grated Parmesan cheese
Method
- 1 Heat a large nonstick pan over medium heat. Add ground turkey and paprika. Cook and stir until meat is browned, about 5 minutes.
- 2 Stir in tomatoes, chicken broth, and pasta. Bring to a boil, then reduce heat to medium-low. Cover and simmer until pasta is almost tender, 10-15 minutes.
- 3 Remove lid. Place vegetables on top of the pasta. Replace lid and cook until vegetables are tender, about 5 minutes.
- 4 Mix parsley, bread crumbs, and Parmesan cheese. Sprinkle over the vegetables in the skillet. Cover and let sit for 3 minutes before serving.
