Skillet Broccoli, White Bean, And Brown Rice Stew
Ingredients
- 1 package (10 oz) frozen broccoli (or mustard greens, collard greens, or spinach)
- 2 cans (about 30 oz total) low sodium stewed tomatoes
- 1 cup cooked brown rice
- 1 can (15 oz) white beans, rinsed and drained
- Pepper to taste
- Oregano, basil, or hot pepper to taste (optional)
Method
- 1 Steam the broccoli (or greens) in the stewed tomatoes in a skillet over medium-high heat.
- 2 Cook for 10 to 20 minutes until the greens are tender, stirring gently.
- 3 Stir in the cooked brown rice, rinsed white beans, and seasonings.
- 4 Cook until everything is heated through.
