Simmered Veal Neck With Celery
Ingredients
- 1 neck of veal (best end)
- 2 cups beef broth
- Salt to taste
- Whole black peppercorns
- 2 cloves
- 1 small onion
- 1 strip lemon peel
- 2 tbsp flour
- 2 tbsp heavy cream
- 1 cup celery, boiled and cut into lengths
Method
- 1 Place the veal neck in a stewpan with beef broth, salt, peppercorns, cloves, onion, and lemon peel. Tie the spices in a muslin bag if desired.
- 2 Simmer gently until the veal is tender, about 30-40 minutes.
- 3 Mix flour and cream into a smooth paste. Stir into the stewpan to thicken the sauce.
- 4 Add the pre-boiled celery pieces and bring to a boil, stirring constantly until heated through and sauce is smooth.
