Simmered Pork In Red Chile Sauce

Ingredients

  • 2 pounds pork (cut into small pieces, save some fat)
  • 5 dried red chiles
  • 1 teaspoon oregano
  • 1/2 teaspoon garlic powder
  • salt (to taste, optional)
  • 1 cup water

Method

  1. 1 Wash chiles, removing stems and seeds. Place in blender with 1 cup water and blend into a smooth paste.
  2. 2 Heat pork fat in a deep skillet until it covers the bottom. Discard any excess fat.
  3. 3 Brown the pork lightly. Add the chile paste and mix well, adding water if the mixture is too thick.
  4. 4 Add oregano and garlic. Cover the pan and simmer slowly for one hour.
