Simmered Oyster Broth

Ingredients

  • 24 oysters
  • Water (as needed to make 2 cups total liquid)
  • Salt
  • Pepper

Method

  1. 1 Drain oysters, reserving the liquid. Wash and pick over oysters to remove any shell fragments.
  2. 2 Chop oysters finely and place in a saucepan. Add the reserved oyster liquid and enough water to total 2 cups.
  3. 3 Simmer slowly for 15 minutes, allowing it to boil up once.
  4. 4 Strain the broth, season with salt and pepper, and serve hot or cold.
