Simmered Oyster Broth
Ingredients
- 24 oysters
- Water (as needed to make 2 cups total liquid)
- Salt
- Pepper
Method
- 1 Drain oysters, reserving the liquid. Wash and pick over oysters to remove any shell fragments.
- 2 Chop oysters finely and place in a saucepan. Add the reserved oyster liquid and enough water to total 2 cups.
- 3 Simmer slowly for 15 minutes, allowing it to boil up once.
- 4 Strain the broth, season with salt and pepper, and serve hot or cold.
