Simmered Mutton Broth With Rice

Ingredients

  • 1 lb mutton neck or shoulder, cut into pieces with fat removed
  • 1 quart cold water
  • 1 stick celery
  • 2 tbsp rice
  • Salt and pepper to taste

Method

  1. 1 Place the mutton pieces in a pot with one quart of cold water.
  2. 2 Simmer for four to five hours.
  3. 3 Strain the broth into a bowl and remove the grease.
  4. 4 For each quart of stock, add one stick of celery, two tablespoons of rice, salt, and pepper.
  5. 5 Boil until the rice is soft before serving.
