Simmered Mutton Broth With Rice
Ingredients
- 1 lb mutton neck or shoulder, cut into pieces with fat removed
- 1 quart cold water
- 1 stick celery
- 2 tbsp rice
- Salt and pepper to taste
Method
- 1 Place the mutton pieces in a pot with one quart of cold water.
- 2 Simmer for four to five hours.
- 3 Strain the broth into a bowl and remove the grease.
- 4 For each quart of stock, add one stick of celery, two tablespoons of rice, salt, and pepper.
- 5 Boil until the rice is soft before serving.
