Simmered Mushrooms With Egg Yolks
Ingredients
- 1 pint fresh mushrooms
- 2 tablespoons vinegar
- 1 sprig parsley
- 1 small onion
- 1 tablespoon chives, chopped
- Salt and pepper to taste
- Grated nutmeg
- 2 egg yolks
Method
- 1 Peel mushrooms and remove stalks. Place in a stew-pan with vinegar, parsley, onion, chives, salt, pepper, and nutmeg.
- 2 Simmer gently for 15 minutes.
- 3 Remove from heat and stir in egg yolks before serving.
