Ingredients

  • 1 pint fresh mushrooms
  • 2 tablespoons vinegar
  • 1 sprig parsley
  • 1 small onion
  • 1 tablespoon chives, chopped
  • Salt and pepper to taste
  • Grated nutmeg
  • 2 egg yolks

Method

  1. 1 Peel mushrooms and remove stalks. Place in a stew-pan with vinegar, parsley, onion, chives, salt, pepper, and nutmeg.
  2. 2 Simmer gently for 15 minutes.
  3. 3 Remove from heat and stir in egg yolks before serving.
