Simmered Lamb With Green Peas
Ingredients
- 1 lamb breast, cut into square pieces
- Salt, to taste
- Flour, for dredging
- Butter
- Stock or water, enough to cover
- 1 onion, sliced
- 1 quart shelled green peas
Method
- 1 Sprinkle lamb pieces with salt, dredge with flour, and brown in butter.
- 2 Cover with stock or water, add sliced onion, and simmer until bones are easily removable.
- 3 Remove lamb, debone, and strain the liquid. Reheat the strained liquid.
- 4 Add shelled green peas to the liquid and simmer for fifteen minutes.
