Simmered Lamb With Green Peas

Ingredients

  • 1 lamb breast, cut into square pieces
  • Salt, to taste
  • Flour, for dredging
  • Butter
  • Stock or water, enough to cover
  • 1 onion, sliced
  • 1 quart shelled green peas

Method

  1. 1 Sprinkle lamb pieces with salt, dredge with flour, and brown in butter.
  2. 2 Cover with stock or water, add sliced onion, and simmer until bones are easily removable.
  3. 3 Remove lamb, debone, and strain the liquid. Reheat the strained liquid.
  4. 4 Add shelled green peas to the liquid and simmer for fifteen minutes.
