Simmered Haddock And Oysters With Egg Yolk Sauce

Ingredients

  • 1 haddock
  • 1 pint oysters
  • 1 slice onion
  • 1 pinch powdered sweet herbs
  • 1 slice carrot
  • Salt and pepper
  • Juice of 1 lemon
  • 4 egg yolks

Method

  1. 1 Clean and fillet the haddock. Cover trimmings with water, add oyster liquor, onion, herbs, and carrot; simmer to make a stock.
  2. 2 Layer sliced onion in a saucepan, then arrange fish fillets and oysters on top. Season with salt and pepper and add lemon juice.
  3. 3 Cover with more sliced onion, strain the stock over the fish, cover, and simmer until fillets are tender.
  4. 4 Arrange fillets and oysters on a hot dish. Strain the liquid, thicken with egg yolks, pour over, and serve.
