Simmered Haddock And Oysters With Egg Yolk Sauce
Ingredients
- 1 haddock
- 1 pint oysters
- 1 slice onion
- 1 pinch powdered sweet herbs
- 1 slice carrot
- Salt and pepper
- Juice of 1 lemon
- 4 egg yolks
Method
- 1 Clean and fillet the haddock. Cover trimmings with water, add oyster liquor, onion, herbs, and carrot; simmer to make a stock.
- 2 Layer sliced onion in a saucepan, then arrange fish fillets and oysters on top. Season with salt and pepper and add lemon juice.
- 3 Cover with more sliced onion, strain the stock over the fish, cover, and simmer until fillets are tender.
- 4 Arrange fillets and oysters on a hot dish. Strain the liquid, thicken with egg yolks, pour over, and serve.
