Simmered Collard Greens With Tomatoes

Ingredients

  • 1 tablespoon vegetable oil
  • 1/2 tablespoon butter
  • 1/2 medium onion, chopped
  • 1/8 teaspoon red pepper flakes
  • 2 1/2 cups collard greens, stems removed and chopped
  • 2 tomatoes, seeds removed and chopped
  • 2 cups low-sodium vegetable broth
  • Salt and black pepper to taste

Method

  1. 1 Heat oil and butter in a large pot over medium heat. Add onion and cook until slightly soft, about 2 minutes.
  2. 2 Add red pepper flakes and garlic powder; cook for 1 minute. Add chopped collard greens and cook for another minute.
  3. 3 Pour in vegetable broth, cover, and bring to a simmer. Cook for 40 minutes until greens are tender.
  4. 4 Stir in chopped tomatoes. Season with salt and black pepper to taste. Serve hot.
