Simmered Cod In Tomato Sauce
Ingredients
- 1 lb cod cutlets
- 5 or 6 tomatoes
- 1 tablespoon vinegar
- Cayenne pepper
- Salt
Method
- 1 Rub tomatoes through a sieve to make a purée.
- 2 Place the tomato purée in a saucepan and lay the cod pieces in it, ensuring the purée covers the fish.
- 3 Simmer gently until the cod is tender.
- 4 Add vinegar, salt, and cayenne pepper. Dish the cod in a circle and pour the tomato sauce over.
