Simmered Cod In Tomato Sauce

Ingredients

  • 1 lb cod cutlets
  • 5 or 6 tomatoes
  • 1 tablespoon vinegar
  • Cayenne pepper
  • Salt

Method

  1. 1 Rub tomatoes through a sieve to make a purée.
  2. 2 Place the tomato purée in a saucepan and lay the cod pieces in it, ensuring the purée covers the fish.
  3. 3 Simmer gently until the cod is tender.
  4. 4 Add vinegar, salt, and cayenne pepper. Dish the cod in a circle and pour the tomato sauce over.
