Simmered Chicken Rice Soup From Scratch

Ingredients

  • 1 whole chicken
  • 4 quarts cold water
  • ½ cup rice
  • Salt and pepper to taste

Method

  1. 1 Clean the chicken, remove fat, and cut into pieces.
  2. 2 Place chicken in a saucepan with water (1 quart per pound). Simmer for 4 hours until meat is tender.
  3. 3 Remove the breast meat. Strain the broth through a sieve.
  4. 4 Let the soup stand to allow grease to rise, then carefully remove the fat.
  5. 5 Return broth to the pan. Add diced breast meat and rice.
  6. 6 Season with salt and pepper. Cook until rice is tender.
