Simmered Chicken Rice Soup From Scratch
Ingredients
- 1 whole chicken
- 4 quarts cold water
- ½ cup rice
- Salt and pepper to taste
Method
- 1 Clean the chicken, remove fat, and cut into pieces.
- 2 Place chicken in a saucepan with water (1 quart per pound). Simmer for 4 hours until meat is tender.
- 3 Remove the breast meat. Strain the broth through a sieve.
- 4 Let the soup stand to allow grease to rise, then carefully remove the fat.
- 5 Return broth to the pan. Add diced breast meat and rice.
- 6 Season with salt and pepper. Cook until rice is tender.
