Simmered Chicken Fricassee With Lemon
Ingredients
- 1 whole chicken, cut into joints
- Cold water for boiling
- 1 small bunch fresh parsley
- 1 small bunch fresh thyme
- 1 small onion
- 2 tbsp all-purpose flour
- 2 tbsp water
- 1 egg yolk
- 2 tbsp heavy cream
- 1 tbsp fresh lemon juice
- Salt and pepper to taste
Method
- 1 Place chicken joints in a pot of cold water. Bring to a boil over medium heat, skimming off any foam that rises to the surface.
- 2 Remove chicken from pot and reserve the cooking liquid. Skin, wash, and trim the chicken joints.
- 3 Return chicken to the pot with the reserved liquid, parsley, thyme, and onion. Simmer until chicken is tender.
- 4 Whisk flour and water into a smooth paste. Stir into the pot and cook until the sauce thickens.
- 5 Remove from heat. Temper the egg yolk and cream with a little hot sauce, then stir back into the pot. Add lemon juice, parsley, salt, and pepper.
