Simmered Chicken Fricassee With Lemon

Ingredients

  • 1 whole chicken, cut into joints
  • Cold water for boiling
  • 1 small bunch fresh parsley
  • 1 small bunch fresh thyme
  • 1 small onion
  • 2 tbsp all-purpose flour
  • 2 tbsp water
  • 1 egg yolk
  • 2 tbsp heavy cream
  • 1 tbsp fresh lemon juice
  • Salt and pepper to taste

Method

  1. 1 Place chicken joints in a pot of cold water. Bring to a boil over medium heat, skimming off any foam that rises to the surface.
  2. 2 Remove chicken from pot and reserve the cooking liquid. Skin, wash, and trim the chicken joints.
  3. 3 Return chicken to the pot with the reserved liquid, parsley, thyme, and onion. Simmer until chicken is tender.
  4. 4 Whisk flour and water into a smooth paste. Stir into the pot and cook until the sauce thickens.
  5. 5 Remove from heat. Temper the egg yolk and cream with a little hot sauce, then stir back into the pot. Add lemon juice, parsley, salt, and pepper.
