Simmered Butternut Squash And Black Beans
Ingredients
- 1 small butternut squash (about 1 pound), cubed
- 1 teaspoon vegetable oil
- 1 small onion, chopped
- 1/4 teaspoon garlic powder
- 1/4 cup red wine vinegar
- 1/4 cup water
- 2 cans black beans (16 ounces each), rinsed and drained
- 1/2 teaspoon oregano
Method
- 1 Microwave the whole squash on high for 1-2 minutes to soften the skin.
- 2 Peel the squash and cut it into 1/2-inch cubes. Chop the onion.
- 3 Heat oil in a large pan over medium heat. Add onion, garlic powder, and squash; cook for 5 minutes.
- 4 Stir in vinegar and water. Reduce heat to low and simmer until squash is tender, about 10 minutes.
- 5 Add black beans and oregano; cook until beans are heated through.
