Simmered Butternut Squash And Black Beans

Ingredients

  • 1 small butternut squash (about 1 pound), cubed
  • 1 teaspoon vegetable oil
  • 1 small onion, chopped
  • 1/4 teaspoon garlic powder
  • 1/4 cup red wine vinegar
  • 1/4 cup water
  • 2 cans black beans (16 ounces each), rinsed and drained
  • 1/2 teaspoon oregano

Method

  1. 1 Microwave the whole squash on high for 1-2 minutes to soften the skin.
  2. 2 Peel the squash and cut it into 1/2-inch cubes. Chop the onion.
  3. 3 Heat oil in a large pan over medium heat. Add onion, garlic powder, and squash; cook for 5 minutes.
  4. 4 Stir in vinegar and water. Reduce heat to low and simmer until squash is tender, about 10 minutes.
  5. 5 Add black beans and oregano; cook until beans are heated through.
