Simmered Beef And Vegetable Broth

Ingredients

  • 1 lb beef (cut into small pieces)
  • 1 quart water
  • 1 piece onion
  • 1 piece carrot
  • 1 piece turnip
  • 1 sprig parsley
  • Thyme and marjoram
  • Pepper and salt to taste
  • 1.5 oz flour (optional, for thickening)

Method

  1. 1 Cut beef into small pieces. Place beef, vegetables, herbs, and water in a stewpan.
  2. 2 Simmer very gently for four hours.
  3. 3 Strain the liquid. If a thick gravy is desired, whisk in flour and season with pepper and salt.
