Sieved Tomato Basil Sauce
Ingredients
- 1 large tablespoon butter
- 1 small onion, chopped fine
- ½ green pepper, chopped fine (optional)
- 1 heaping teaspoon flour
- 4 fresh tomatoes, peeled and chopped
- ¼ cup vegetable stock
- 1 clove
- 1 bay leaf
- Salt and pepper to taste
Method
- 1 Melt butter in a saucepan over heat. Add chopped onion and green pepper, simmering gently for a few minutes.
- 2 Stir in flour, then add tomatoes, vegetable stock, clove, and bay leaf. Season with salt and pepper.
- 3 Cook gently for 30 minutes, then press the mixture through a fine sieve.
