Sieved Lemon Bread Pudding
Ingredients
- 5 oz soft bread crumbs
- 3.5 oz butter
- 4 eggs
- 1 tsp lemon peel
- 1 pinch salt
- 1/4 cup sugar
- 1/2 cup milk
- butter and bread crumbs for greasing mold
Method
- 1 Cut bread crumbs into pieces and soak in cold milk, then rub through a sieve.
- 2 Melt butter in a double boiler and mix with eggs until incorporated.
- 3 Add bread crumbs, sugar, lemon peel, and salt; mix well.
- 4 Pour into a butter-greased mold sprinkled with fine bread crumbs.
- 5 Bake at 350°F until set and golden, similar to standard pudding methods.
