Sieved Lemon Bread Pudding

Ingredients

  • 5 oz soft bread crumbs
  • 3.5 oz butter
  • 4 eggs
  • 1 tsp lemon peel
  • 1 pinch salt
  • 1/4 cup sugar
  • 1/2 cup milk
  • butter and bread crumbs for greasing mold

Method

  1. 1 Cut bread crumbs into pieces and soak in cold milk, then rub through a sieve.
  2. 2 Melt butter in a double boiler and mix with eggs until incorporated.
  3. 3 Add bread crumbs, sugar, lemon peel, and salt; mix well.
  4. 4 Pour into a butter-greased mold sprinkled with fine bread crumbs.
  5. 5 Bake at 350°F until set and golden, similar to standard pudding methods.
