Sieved Apple Lemon Custard Pie
Ingredients
- 1 lb apples, peeled and sieved
- ½ lb butter
- ½ lb powdered sugar
- Zest of 2 lemons
- 6 eggs, beaten
- Pie crust or pastry for dish bottom
- Extra powdered sugar for dusting
Method
- 1 Preheat oven to 350°F.
- 2 Bake peeled apples until tender but not burnt, then rub through a sieve to create a smooth puree.
- 3 While the apple puree is hot, mix in the butter and powdered sugar until combined.
- 4 Stir in the grated lemon zest and allow the mixture to cool slightly.
- 5 Fold in the beaten eggs and pour the mixture into a dish lined with pastry.
- 6 Bake for 30 minutes, then sift a little powdered sugar over the top before serving.
