Shrimp And Bamboo Sprout Salad

Ingredients

  • 1 cup cooked shrimp, broken into small pieces
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 1 can tender bamboo sprouts, drained and cut into small pieces
  • 1 head lettuce, shredded
  • Lettuce hearts for garnish
  • Whole cooked shrimp for garnish
  • Thin slices of bamboo sprouts for garnish

Method

  1. 1 Marinate the broken shrimp pieces with 1 tablespoon oil, 1 tablespoon lemon juice, salt, and pepper. Set aside.
  2. 2 Prepare the dressing by whisking 3 parts oil to 1 part lemon juice (approx. 3 tbsp oil and 1 tbsp lemon juice) until emulsified and glossy.
  3. 3 Toss the drained bamboo sprouts with the dressing until coated. Drain the marinated shrimp and add them to the sprouts, mixing gently.
  4. 4 Arrange shredded lettuce on a platter. Top with the shrimp and bamboo mixture. Garnish with lettuce hearts, whole shrimp, and thin bamboo slices.
