Shredded Cod And Potato Salad
Ingredients
- 1 piece codfish
- ½ cup diluted vinegar
- black pepper to season
- 1 cup cold boiled potatoes, sliced very thin
- 1 tablespoon chopped parsley
- 1 hard-boiled egg
- 1 teaspoon olive oil
Method
- 1 Soak the codfish overnight in water.
- 2 Place the fish in fresh water and bring to a boil, but do not let it boil vigorously. Remove the fish and shred it, discarding skin and bones. Allow to cool.
- 3 Combine the shredded fish with sliced cold boiled potatoes, chopped parsley, pepper, olive oil, and diluted vinegar. Toss to combine.
