Shredded Carrot And Broccoli Quesadillas

Ingredients

  • cooking oil spray
  • 1/2 small zucchini, washed and chopped
  • 1 small broccoli head, washed and chopped
  • 1 green bell pepper, washed, seeded and chopped
  • 1 medium onion, peeled and chopped
  • 4 medium carrots, scrubbed and shredded
  • 1 cup whole wheat tortillas (10-inch)
  • 1/2 cup shredded low-fat cheddar cheese
  • salsa, for serving

Method

  1. 1 Spray a pan with cooking oil spray. Cook chopped zucchini, broccoli, bell pepper, onion, and carrots on medium heat for 4-5 minutes, stirring frequently. Remove vegetables from the pan.
  2. 2 Spray the pan with cooking spray. Place one tortilla in the pan. Sprinkle half the vegetables and half the cheese over the tortilla.
  3. 3 Place the second tortilla on top. Cook on medium heat for 4-6 minutes until the bottom browns and cheese begins to melt.
  4. 4 Flip the quesadilla carefully. Cook for 4 minutes until the other side browns. Repeat for remaining quesadillas.
  5. 5 Cut each quesadilla in half and serve immediately with salsa.
