Shredded Carrot And Broccoli Quesadillas
Ingredients
- cooking oil spray
- 1/2 small zucchini, washed and chopped
- 1 small broccoli head, washed and chopped
- 1 green bell pepper, washed, seeded and chopped
- 1 medium onion, peeled and chopped
- 4 medium carrots, scrubbed and shredded
- 1 cup whole wheat tortillas (10-inch)
- 1/2 cup shredded low-fat cheddar cheese
- salsa, for serving
Method
- 1 Spray a pan with cooking oil spray. Cook chopped zucchini, broccoli, bell pepper, onion, and carrots on medium heat for 4-5 minutes, stirring frequently. Remove vegetables from the pan.
- 2 Spray the pan with cooking spray. Place one tortilla in the pan. Sprinkle half the vegetables and half the cheese over the tortilla.
- 3 Place the second tortilla on top. Cook on medium heat for 4-6 minutes until the bottom browns and cheese begins to melt.
- 4 Flip the quesadilla carefully. Cook for 4 minutes until the other side browns. Repeat for remaining quesadillas.
- 5 Cut each quesadilla in half and serve immediately with salsa.
