Shirred Eggs With Butter Glaze

  • 4 eggs
  • Butter for greasing dishes
  • Salt
  • Hot butter for basting

Method

  1. 1 Butter individual china dishes. Break one egg into each dish.
  2. 2 Sprinkle a little salt on the whites only, avoiding the yolks.
  3. 3 Place dishes in a hot oven. Baste the yolks several times with hot butter to create a glaze.
  4. 4 Remove from oven as soon as the glaze appears. If needed, stand on top of range for one minute. Do not dry the eggs.
