Shin Beef Stew With Tomatoes And Carrots
Ingredients
- 2 pounds shin beef, bone-in
- ½ cup flour
- 5 tablespoons shortening
- 2 cups boiling water
- 1 cup chopped onions
- 2 carrots, diced
- 1 cup canned tomatoes
- Salt and pepper to taste
Method
- 1 Wipe beef with a damp cloth and pat ½ cup flour onto the meat.
- 2 Melt shortening in a deep saucepan. Brown the beef quickly on all sides.
- 3 Add boiling water, onions, diced carrots, and canned tomatoes.
- 4 Bring to a boil, cover, and cook slowly until tender, about 2 hours.
- 5 Season with salt and pepper. Serve hot.
