  • 2 pounds shin beef, bone-in
  • ½ cup flour
  • 5 tablespoons shortening
  • 2 cups boiling water
  • 1 cup chopped onions
  • 2 carrots, diced
  • 1 cup canned tomatoes
  • Salt and pepper to taste

Method

  1. 1 Wipe beef with a damp cloth and pat ½ cup flour onto the meat.
  2. 2 Melt shortening in a deep saucepan. Brown the beef quickly on all sides.
  3. 3 Add boiling water, onions, diced carrots, and canned tomatoes.
  4. 4 Bring to a boil, cover, and cook slowly until tender, about 2 hours.
