Sherry Sardine Sauce

Ingredients

  • 2 tbsp butter
  • 2 tbsp flour
  • 1 dash paprika
  • ½ cup stock
  • ½ cup sherry
  • 1 cup sardines, bones and skin removed, flesh flaked

Method

  1. 1 Melt butter in a saucepan over medium heat. Add flour and paprika, stirring constantly until the mixture is smooth and lightly browned.
  2. 2 Gradually whisk in the stock and sherry. Stir continuously until the sauce thickens.
  3. 3 Stir in the flaked sardines. Simmer for a few minutes until the mixture is very hot and well combined.
