Sherry Fruit Cake With Boiled Frosting
Ingredients
- 1 cup butter
- 1 cup sugar
- 4 egg yolks, well-beaten
- 1 cup flour, sifted
- 1 teaspoon baking powder
- pinch grated nutmeg
- 4 egg whites, stiffly beaten
- 1/2 cup currants
- 1/2 cup blanched and shredded almonds
- 1/2 cup sherry
- shredded candied orange peel
- shredded citron
- boiled frosting
Method
- 1 Cream 1 cup butter and 1 cup sugar together. Add 4 well-beaten egg yolks, a pinch of grated nutmeg, and 1 cup flour sifted with 1 teaspoon baking powder.
- 2 Fold in 4 stiffly beaten egg whites. Add 1/2 cup currants, 1/2 cup blanched and shredded almonds, and gradually 1/2 cup sherry.
- 3 Layer the batter in a buttered tin, alternating with shredded candied orange peel and citron.
- 4 Bake in a moderate oven (350°F) for 3 hours. Remove and ice with boiled frosting.
