Sherry Fruit Cake With Boiled Frosting

Ingredients

  • 1 cup butter
  • 1 cup sugar
  • 4 egg yolks, well-beaten
  • 1 cup flour, sifted
  • 1 teaspoon baking powder
  • pinch grated nutmeg
  • 4 egg whites, stiffly beaten
  • 1/2 cup currants
  • 1/2 cup blanched and shredded almonds
  • 1/2 cup sherry
  • shredded candied orange peel
  • shredded citron
  • boiled frosting

Method

  1. 1 Cream 1 cup butter and 1 cup sugar together. Add 4 well-beaten egg yolks, a pinch of grated nutmeg, and 1 cup flour sifted with 1 teaspoon baking powder.
  2. 2 Fold in 4 stiffly beaten egg whites. Add 1/2 cup currants, 1/2 cup blanched and shredded almonds, and gradually 1/2 cup sherry.
  3. 3 Layer the batter in a buttered tin, alternating with shredded candied orange peel and citron.
  4. 4 Bake in a moderate oven (350°F) for 3 hours. Remove and ice with boiled frosting.
