Sherry Butter Puffed Pancakes

  • 1 cup all-purpose flour
  • 4 large eggs
  • 1 cup heavy cream
  • 4 ounces unsalted butter, melted
  • 1 pinch salt
  • Freshly grated nutmeg
  • Melted butter (for sauce)
  • Sherry (for sauce)
  • Sugar (for sauce)

Method

  1. 1 Preheat oven to 425°F. Grease 14 small cups or muffin tins.
  2. 2 Whisk flour, eggs, cream, melted butter, salt, and nutmeg until smooth.
  3. 3 Divide batter into cups. Bake for 15 minutes until puffed and browned.
