Sherry Butter Puffed Pancakes
Ingredients
- 1 cup all-purpose flour
- 4 large eggs
- 1 cup heavy cream
- 4 ounces unsalted butter, melted
- 1 pinch salt
- Freshly grated nutmeg
- Melted butter (for sauce)
- Sherry (for sauce)
- Sugar (for sauce)
Method
- 1 Preheat oven to 425°F. Grease 14 small cups or muffin tins.
- 2 Whisk flour, eggs, cream, melted butter, salt, and nutmeg until smooth.
- 3 Divide batter into cups. Bake for 15 minutes until puffed and browned.
- 4 Serve immediately with a sauce of melted butter, sherry, and sugar.
