Sherry Braised Partridges With Preserved Tomatoes

Ingredients

  • 2 partridges
  • 2 tbsp oil
  • 1 small piece garlic
  • 2 tbsp strong stock
  • 1 glass sherry
  • 2 tbsp preserved tomatoes
  • salt and pepper to taste

Method

  1. 1 Wipe partridges inside with a damp cloth. Cut off heads and truss legs like boiled fowls.
  2. 2 Place partridges in a stewpan with oil and a pea-sized piece of garlic. Shake over a clear fire until slightly browned all over.
  3. 3 Pour in stock, sherry, and preserved tomatoes. Season with salt and plenty of pepper.
  4. 4 Simmer gently until partridges are fully cooked. Serve very hot with the highly seasoned sauce.
