Sherry Braised Partridges With Preserved Tomatoes
Ingredients
- 2 partridges
- 2 tbsp oil
- 1 small piece garlic
- 2 tbsp strong stock
- 1 glass sherry
- 2 tbsp preserved tomatoes
- salt and pepper to taste
Method
- 1 Wipe partridges inside with a damp cloth. Cut off heads and truss legs like boiled fowls.
- 2 Place partridges in a stewpan with oil and a pea-sized piece of garlic. Shake over a clear fire until slightly browned all over.
- 3 Pour in stock, sherry, and preserved tomatoes. Season with salt and plenty of pepper.
- 4 Simmer gently until partridges are fully cooked. Serve very hot with the highly seasoned sauce.
