Sherry And Lemon Brown Bean Soup
Ingredients
- 1 cup brown beans, soaked overnight
- 1 gallon water
- 3-inch square piece salt pork
- 1 tablespoon butter
- Juice of 1 lemon
- ¼ cup sherry wine
Method
- 1 Soak brown beans overnight in water.
- 2 Boil soaked beans with salt pork in a gallon of water for several hours until tender.
- 3 Strain the soup, discarding the pork.
- 4 Stir in butter, lemon juice, and sherry wine.
