Ingredients

  • 1 cup brown beans, soaked overnight
  • 1 gallon water
  • 3-inch square piece salt pork
  • 1 tablespoon butter
  • Juice of 1 lemon
  • ¼ cup sherry wine

Method

  1. 1 Soak brown beans overnight in water.
  2. 2 Boil soaked beans with salt pork in a gallon of water for several hours until tender.
  3. 3 Strain the soup, discarding the pork.
  4. 4 Stir in butter, lemon juice, and sherry wine.
